One of my favorite things about the winter is cozying up under warm throw blankets and sipping on hot soup. Growing up in the South, most of the favorite soups were naturally cream-based. During my first whole30 a few years ago, I gained an entirely new appreciation for broth based soups and stews! Today, I’m sharing some of my favorite Whole30 soup and stew recipes!
Instant Pot Chicken Salsa Soup – my favorite part of this soup is that it can all be done in less than one hour in ONE POT. Put this on your meal plan for next week!
Slow Cooker Hamburger Soup – Everyone loves a great slow cooker recipe, especially during Whole30. This is a classic, hearty soup that the whole family is sure to love!
Roasted Red Pepper Soup – I love pairing this red pepper soup with a crisp salad and lime infused dressing. This is also a great option to make now and freeze for later!
Roasted Poblano Beef Stew – Do not skip Roasting the poblanos on a gas grill or broiling them in the oven. The smokiness these peppers add is the difference between good beef stew and GREAT beef stew.
Slow Cooker White Chicken Chili – The spices in this soup are incredibly satisfying and take me away to a fiesta by the sea. Make sure to use the full fat coconut milk for the extra creaminess!
Whole30 Zuppa Toscana Soup – This soup has been a game-changer for us. One of my girlfriends recommended the soup during our first round but for some (totally incorrect) reason, I resisted this recipe. Finally, about a year ago, I made my first batch…and I’ve been hooked ever since . The kale cooks down very quickly and melds into the flavors so beautifully. MAKE THIS SOUP IMMEDIATELY — or live to regret it as I have.
Asian Beef Zoodle Soup – Asian flavors have been the hardest for me to grasp on my own. I have felt for year that it’s easier to just eat out than try to figure out how these flavors come together. This soup was the beginning of my feelings on Asian food changing. Sup easy, super clean, and SUPER delicious. I can’t get enough of it. If you want to make ahead and freeze, I recommend waiting to add the zoodles until you are reheating and ready to eat so they stay nice and crisp.
Simple Egg Drop Soup – I think everyone knows by now what a Fan Girl of Nom Nom Paleo’s I am. She can basically do no wrong in my world. This egg drop soup is the perfect comfort meal and I LOVE pairing it with these compliant wonton meatballs, also from Nom Nom.
Chocolate Chili – This is, by far, my most used recipe even when not on a whole30 round. We eat Chocolate Chili probably twice per week all year long. We eat the chili as a stand alone meal. We eat the chili on top of baked potatoes. We eat the chili with eggs. We just eat the chili. It is so, so flavorful and versatile.
Cinnamon Beef Stew – Beef stew has always been the ultimate comfort food in our house. This is a more traditional recipe than the Poblano Beef Stew above. Both equally delicious and appreciated by our bellies! Let me know your favorite!
