10 Whole30 lunch and dinner options!
One of my favorite things about Whole30 is resetting my own expectations around food. These 30 days are a good way to remind ourselves that food is really to be enjoyed and savored, but not obsessed over and turned into an idol. It’s a fine line to walk and a particularly difficult one for me because of the enjoyment I get from creating beautiful meals for loved ones. Because my energy levels typically decline during the first week on a round, I like to keep meals simple. I have also found that re-using dinner as the next’s days lunch is super easy and keeps some of the overwhelmed feelings at bay.
Below, I’m linking to my favorite whole30 lunch and dinner options! I’ve tested all of these and they are truly delicious and worth making again..and again!
The Perfect Beef Tenderloin – My favorite thing about this recipe is the ease at which it is to create. You don’t have to do much to give yourself a serious treat – I always make an extra tenderloin that we can use in egg scrambles throughout the week. Talk about the gift that keeps on giving!
South Texas Turkey Burgers – The hot sauce and jalapenos give these turkey burgers the extra kick I often find is missing from a good turkey burger. Make sure to add the almond meal so that they don’t fall apart on you!
Big O Bacon Burgers – Nom Nom Paleo takes burgers up a notch with this recipe. Even my husband the Mushroom Hater loves the added umami from the ‘shrooms in these burgers.
Spinach Artichoke Twice Backed Potatoes – YUM.yum.yummy! These potatoes are so, so good. The spinach, artichoke, and coconut cream combine to make these potatoes the epitome of fluffy deliciousness. I love to cook 6-8 of these at a time, then freeze them individually. I grab one on the way out the door and leave it in my lunch bag to thaw before lunchtime.
Like Chick-Fil-A nuggets – I’m not going too far out a limb here when I say that these 100% compliant nuggets are actually better than the fast food version. Make sure to give yourself enough time to marinade the nuggets in pickle juice before cooking — that’s the secret!
Buffalo Chicken Casserole – This Buffalo Chicken Casserole is soo delicious on top of salads or eaten as a dip with fresh veggies. This is a great option when you find yourself traveling or stuck in a meeting during mealtime.
Meatball Marinara – Our family eats these meatballs alone or paired with zoodles. They’re cooked down in the marinara sauce and take on the super rich tomato sauce to add to the juiciness of the meatballs. I’m hungry just thinking about it.
Wonton Meatballs – These wonton meatballs are every.thing. They taste exactly like crispy, salty wontons from a restaurant except BETTER because I know they won’t make me feel super yucky.
Chocolate Chili – I make this chocolate chili more than any other recipe, hands down. It is absolutely delicious and cooks down into more of a stew than chili. I eat it plain, over potatoes, over sweet potatoes, with eggs, literally all the the time. This is my numero uno while on a round! TRY IT!
Egg Roll in a Bowl – Mix up this delicious recipe when you’re ready for something light and fresh. This recipe only takes about 15 minutes from start to finish and tastes even better on Day 2!
Poblano Beef Stew – This poblano beef stew will not let you down! Don’t skip browning the meat OR roasting the poblanos ahead of time. If you only have an electric cooktop, throw the poblanos straight into the oven on Broil for 2 minutes, turn, and broil all sides.
