Hey y’all! Can you believe that we are heading into week 4 of this round of Whole30? This past week has by far been full of the easiest days so far. Instant Pot Chicken Salsa Soup – Your chicken might look more Red than this depending on the Salsa you use, so don’t freak out if yours does. I’ve had soups ranging from this yellow color to deep red and they’re all super yummy!

Paleo Sesame Chicken – I’ve seen this recipe floating around for a while but have been skeptical. My sister LOVES Chinese takeout so I made this sesame chicken a few weeks ago and WOW, I wish I had started making it earlier. However, like traditional Chinese food, I don’t love this leftover so I only make enough enough to eat at one meal.

Nom Nom Paleo’s Wonton Meatballs – Michelle can do no wrong in my eyes. I love these meatballs! I pre-form them on Meal Prep day and then cook them whenever I’m ready to eat. So delicious!

Slow Cooker Butter Chicken – A few nights each week, I know ahead of time that I won’t have the desire/ability to create a meal after work. I love recipes that allow me to still stay compliant but don’t require an hour in the kitchen. Throw these ingredients in before you head out the door, and come home to an aroma-filled house and dinner ready to eat!

Slow Cooker Savory Pot Roast – Living in South Texas, it’s basically hot here 10 months out of the year. So I take full advantage of the cooler weather by cooking up lots of soups, stews, and warm comfort foods. One of my favorites from childhood is a recipe very similar to this one! 

The Perfect Tenderloin – If you’ve been following my meal plans for long, you’ve probably realized that we cook tenderloin about once a week. They’re just so delicious and decadent. I look forward to this meal all week!
