Crowd Pleasing Turkey Lasagna with Cheesy Garlic Bread

I’m going to go ahead and start this post with a heartbreaker: Despite my best attempts, I have not yet found Paleo Compliant lasagna that touches the ooey, gooey goodness of this delicious turkey lasagna. We’ve done zucchini noodle lasagna, lasagna soup, etc. without being able to replicate this recipe in a fully satisfying way. However, the only “bad” thing in this lasagna are the ravioli themselves. I jam pack the stuffing with vegetables and use homemade marinara sauce but you can modify the vegetables and marinara sauce to your family’s preferences. We also tend to skip the Cheesy Garlic Bread these days…today is not that day. Sometimes you just need some good cheesy bread in your life. Can I get an amen?

for beef mixture
  1. 1lb 99% Lean Ground Turkey
  2. 3 Cloves minced Garlic
  3. Salt and Pepper to taste
for sauce (can substitute 1 large jar of favorite marinara sauce if desired)
  1. 2 cloves minced garlic
  2. 1 drizzle olive oil
  3. 1/2 yellow onion finely chopped
  4. 1 can crushed tomatoes
  5. 1 tsp. Italian seasoning (more if desired)
  6. salt and pepper to taste
For filling
  1. 1 package frozen chopped spinach- thawed and cooked according to package instructions
  2. 1 small can black olives, drained
  3. 2 C. mozzarella cheese
  4. 1 large package cheese ravioli
  5. Parmesan cheese to top
  6. 1 large casserole dish
Instructions
  1. Preheat oven to 350
To make the sauce
  1. Heat olive oil in large stock pot on medium heat
  2. Once oil is hot, add minced garlic and chopped onion
  3. Cook until onion is soft and translucent (about 5 minutes)
  4. Add crushed tomatoes and italian seasoning to pot
  5. Turn heat to high and bring mixture to a boil
  6. Once boiling, turn heat down and simmer sauce while preparing other ingredients
To cook the turkey
  1. Add ground turkey and minced garlic to skillet
  2. Season with salt and pepper
  3. Cook on medium-high heat until no longer pink
  4. Set aside
To assemble
  1. Use 3-4 Tbls of marinara sauce to coat bottom of pan
Layer the rest of the ingredients until pan is full
  1. add 1/2 package of ravioli
  2. add 1/2 amount of cooked turkey
  3. add 1/2 amount of spinach
  4. add 1/2 amount of black olives
  5. Add coat of Marinara Sauce- enough to cover the rest of the ingredients below
  6. add about 1 C. mozzarella cheese
  7. Repeat
  8. To Top: add final amount of mozzarella cheese and sprinkling of Parmesan cheese
  9. Cook for 30 minutes on 350
  10. Broil on High for 2-3 minutes or until cheese is melted
  11. Serve immediately.
  12. Can be stored in the refrigerator for 3 days or stored uncooked and frozen for 2 months.

Ingredients
  1. 1/2 Loaf French Bread
  2. 1 Stick Salted Butter
  3. 3 Cloves Minced Garlic
  4. 2 C. Mozzarella Cheese
  5. Parmesan Cheese to top
Instructions
  1. Preheat oven to 350
  2. Slice French Bread in half creating to open faced halves
  3. Cut butter into 4 pieces
  4. add butter and minced garlic to microwave-safe dish
  5. microwave for 30 seconds or until butter is melted
  6. Brush butter mixture onto bread until bread is completely coated in butter
  7. Top with Mozzarella and Parmesan Cheese- be EXTRA GENEROUS with the cheese
  8. Cook on 350 for 8 minutes
  9. Broil for 2-3 minutes or until cheese is completely melted
Notes
  1. Be sure to watch the cheese! It burns easily when broiling!
