Bacon Wrapped Dates

Did someone say bacon?? I just received my shipment of sugar free, nitrate free, and all around Whole30 compliant bacon from US Wellness Meats! I’m so excited for bacon to be back in my life during this Whole30 journey, I just cannot tell you! In my never ending quest to keep Whole 30 recipes new and fun, I’m turning to an old holiday favorite with a few twists along the way.

This recipe combines a lot of things I really love to create a great Whole30 dish for any time of day. Dates boast a host of nutritional benefits ranging from Potassium, Vitamin B and Iron and gives you a great mix of healthy fat and protein. 





Cashew “cheese” is simply processed cashews, lemon juice, and water. I love filling dates with this mixture because it gives the meal a great does of fat and the moisture from the mixture keeps the dates super creamy!

And, of course, just like some people believe everything is better fried, I believe everything is better wrapped in bacon. This bacon in particular gives a delicious salty and crispy element. I just love it! 

If you want to brown your bacon up like I did, just give them a quick broil at the end of the cooking time.

Ingredients
  1. for Cashew "Cheese"
  2. 1/2 C Cashews
  3. 1/4 C Water
  4. Juice from 1/2 Lemon
  5. 12 Dates
  6. 6 pieces of bacon cut in half
Instructions
  1. Preheat oven to 375
  2. to make cashew "cheese"
  3. add cashews, water, and lemon juice to food processor
  4. process until ricotta like consistency
  5. set aside
  6. cut slit in dates to create pocket
  7. stuff 1 tsp "cheese" into each date
  8. wrap each date in 1/2 piece of bacon and secure with toothpick
  9. Bake for 15 minutes
  10. Turn dates over and bake for 10 more minutes
  11. To crispy bacon, broil for 1-2 minutes
