These balsamic glazed mushrooms are the PERFECT accompaniment for my Pepper Crusted Beef Tenderloin! Serve the mushrooms and sauce dripped over the cut tenderloin for the most delicious and flavorful meal, bite by bite. I also like to serve this as a main course over brown rice. It’s a quick and easy meal on day when you’re trying to lighten it up and cut out the meat.

Ingredients
  1. 1/2 lb mushrooms
  2. 1/2 Stick Butter or 4 TBLS Ghee
  3. 1/2 C Chopped Shallots
  4. 4 Cloves Garlic, Minced
  5. 1 tsp Cornstarch
  6. 1/4 C Balsamic Vinegar
  7. 1/4 C Worcestershire Sauce
  8. tyme
  9. rosemary
Instructions
  1. Preheat oven to 400F
  2. Add Butter (or ghee) and shallots and garlic to a pan and sautee until garlic is browning and shallots are softening
  3. Add remaining ingredients to an oven safe dish and stir to combine
  4. add garlic and shallots and stir
  5. Cook for 35 minutes, until sauce has thickened slightly and mushrooms are tender
Notes
  1. Serve this over Peppercorn Crusted Tenderloin for a decadent Christmas meal!
